Should of said curing Venison and Pork Bacon tonight smoking on a Rec-Tec tomorrow I was thinking going low and slow at 200 to internal temp of 135 sound good or does anybody have any ideas thanks.

Can't speak to venison, but I followed Meathead/Prof. Blonder instructions for bacon and it turned out amazing. Takes more than a one day cure though.
