Anyone run into this label before? It was a buck cheaper than "brisket" at a local supermarket. My wife picked one up, which is duly getting the dry brine treatment.
It looks like a thin flat, though it is Angus choice. The interesting characteristic is that the grain is running diagonally (almost horizontally) across the cut. For some reason, I expect a brisket flat to have the grain running along the length.
So I'm ready to assume I'm dealing with a stealth chuckie for tomorrow's cook. If anyone has any thoughts, I'd love to hear them.
