I tried something I’ve been aiming to do to see if there was a taste difference. I seared 5 skinless chickie thighs, then cut it up & stir fried it to finish it off. Also did some peppers & some mushrooms from a farm near here. They were wonderful. I used a new fuel as you will see. Ding dang that stuff burns hot!
In using a wok, one doesn’t rely on gadgetry & telemetry etc. You work by sight & sound & maybe a little timing. My wok cooked hotter than anything I’ve ever experienced & the times were halved. I had to watch it very carefully. I hope the pics tell some of the story.
Did manage to fit the Derbster (aka Derby) in, as we were waiting on the coals.
