    Tomahawks since it's before the 4th of July and American Indians were here before we were. Got em on sale at Costco again at 11.99 lb for prime. Cold grate technique is the only way to do these guys but I think I'd like to do a little more seasoning for sear. Maybe BBBR without the sugar next time? Thoughts?

      Sugar burns at temps above 350*, so it's not recommended on anything you will sear at high temps unless it is very quick.

      I have never put sugar in BBBR so I say go for it. Love the caveman approach to eating you have there. The growl and scowl look seals the deal!

ID:	525291 Whole packer brisket - about 10 initially. 10 hours on Z Grills pellet grilll with Pit Boss competition blend. Rub is Meat Mitch beef rub. No injection. I pushed through the stall without the Texas Crutch but wrapped it in foil at 205F and put in faux Cambro for 1.5 hours. Flavors were great. Mostly moist but could have been a little better.

    Tried Meatheadsp’s schmancy salmon process with Atlantic Salmon. 2 hour brine then seasoned with Cajun rub, with two of the filets getting a brush of agave per my sons request. On the kettle at 225* to 130*. Used a chunk of sugar maple for a touch of smoke. Served SV carrots and a ramen sesame oil noodle salad.

    Came out out pretty good although some of the filet seemed a touch wet. I have not brined salmon this way before, usually I dry brine with brown sugar and salt then smoked. The tail piece is left over, so will see how the flavor comes through tomorrow. And see what I can whip up with it as well.

    Found some beautiful fresh black sea bass at our fish monger yesterday. It was so tender had to cook it in the grill basket. Simple rub of olive oil, salt and pepper. Served with marinated roasted pepper vinaigrette and red rice. I swear we're going to break out in health with all this fish....

    Jalepeno Stuffed Bacon Wrapped Boneless/Skinless Chicken Thighs

    I was inspired to try one of Malcom Reed's recipes after having watched a YouTube clip on his channel, HowToBBQRight.

    Cooker of choice this time around was my new PK360. I used Weber briquettes and holding 290-300* F was incredibly easy. Once that thing becomes dialed in, it just chugs right along nice and easy.

    I chose not to sauce as heavily as he did in the video. I did a light brush job using BBQ sauce that I thinned out with a bit of water.

    The first pic was taken just as they were put on the grill before I closed the lid, the second was right before I painted them up, and the last was right before I pulled them off the grill. I chose to use the veggie basket when I pulled them from the small loaf pans...just in case one of them wanted to unravel.

    Sunday asado/barbecue with the whole family, mother, brothers, uncles, cousins, everyone, celebrating I've now circled the sun 29 times! Started with some slow-smoked chorizo, fresh tortillas and avocado right off the tree (tropics perks). The chorizo, especially, has improved dramatically since joining the Pit. It is common for most people to grill the chorizo over very high, direct heat. The casings burst, of course, and lose their juices so most of them are very dry. I did this for a long time! Since joining the Pit and learning 2-zone cooking and slow smoking, everyone raves about this chorizo because they lock in the juices and keep moist and very, very flavorful...

    Next, some slow-smoked pork loin rubbed simply with garlic powder, coarse black pepper, parprika and kosher salt, smoked with guava wood for about 2 hours at 250-275f but I was running a little late (just a tiny bit hungover from the day before!) so I had to push it up to 300f at the end until 140f internal, then a quick rest and hot sear. Also grilled some flap meat hot and fast, and my mom oven-baked some rosemary-oil potatoes which were crispy and awesome, and baked two cakes (she's a fantastic baker!) Great Sunday all around. The pork was a BIG hit.

    I was forced to take the next 3 days off (real sad, I know) which I plan to use to test some ideas I have for burgers, mastering my own burger buns and other details I've been wanting to test out. Should be a fun week!
