    We have finally made it back into CSA season. This week's basket had dill and bok choy. Got some fresh farmed salmon from Publix and hit it with Hank's KC Royale. Kudos to Henrik for letting us know that this is good on seafood. Late start, so grilled at 350 with a chunk of pecan in the dark.

    Cooked the salmon to 145 and served with a citrus cream dill sauce and some grilled bok choy. Very happy with the outcome!

    I cooked some country style pork ribs today braised in a sweet and sour sauce. I dry brined the ribs this morning, added some MD rub then on to the Traeger smoker for a couple of hours, then I browned the ribs on the gas grill and into the pot with the sauce for 90 minutes at 300F. They should be good.

    The first 5 days after a weekend are the most stressful for me so today I decided to ease into them with a lazy pasta dish that turned out real tasty.
    Had 3 left over 1/4 pkts different pasta. Cooked the shells, macaroni and spaghetti. Made a ground beef jalapeno chili sauce without any tomato anything (cause I had none on hand) and a good cheese sauce using cheddar and mozzarella. Mixed the chili sauce and pasta together poured the cheese over and baked.

    Couple of things from Saturday...

    I had a request from one of my wife's coworkers for more of Meathead's Sinful Candied Pecans. Made a double batch - 2 lbs fits perfectly on the 26" kettle - and gave away more than half already, but still have plenty to snack on. One pecan wood chunk for a light kiss of smoke.

    And since the SNS in the kettle was fired up and SWMBO wanted burgers - who was I to say no? Especially when our local Harris Teeter carries these for half of what SRF charges on their web site.

    The smaller, darker egg yolk on the right is from the brown egg. The blue egg is from the dark brown hen. Apparently her name is dee and the black chicken has a name of maxi. Geeze.. who knew?
