    Made a swing past the grocery store this evening on the way home and picked up a packaged tri-tip for dinner tonight. It looks good in the photos, and it was tender, but sawdust has more flavor. A bit disappointed.

      Hi. This time I'm cooking for two - the beef was seasoned with a mesquite rub, the pork with a maple rub. I did these with hardwood charcoal and fist-size chunks of apple wood.

      The beef was sliced thin for lunchmeat and moved to the fridge. The pork was dinner, the next day part of eggs benedict, and finally the kickin' it flavor in refried rice.

      Got a nagging need for meat about noon, so I picked up some tri-tip (quick cook) for supper and this is what came out. Simple, but really good. Not a bad crust for a pellet smoker.

      Stuffed with Tillamook colby jack and cream cheese, wrapped in center cut bacon. The mushrooms are only there because I had some cheese left over and some left over baby bellas.

      Smoked on my Rec Tec 680 at 250° for ~2 hours, then at 400° for ~15 minutes to crisp up the bacon.

      Big crowd pleaser!

      9lb pork butt.
      Brined it in apple juice, salt and rub spices for 24hrs.
      Went real heavy on the rub.
      Smoked it for 10hrs and pulled it off at 200F internal.
      It fell apart in my hands. By far the best one I have done yet. It had that crispy bark and that delightful wiggle you get when the fat renders properly.
      Pulled it and tossed lightly in a homemade bbq sauce.

          For grilling, it's all about charcoal. Almost always HEB brand mesquite charcoal. If not that, then Kingsford mesquite charcoal.

        Baby Backs for the family. Nothing left over! I gave my son an offset smoker fro Christmas. (Really gave it to myself to use when we are there.) :-) It is not as heavy duty as mine, so it has taken a few tries to learn how to cook on it.
