      Did you hit the shrimp with a quick grill or just eat out of the bag? I wonder if that would change the outer texture? I’ve never tried shrimp with SV.

      Yeah, the vodka chili sauce is very good! They have so many other great items... i can sample them at our grower's market and all are good. A little high priced, but so it goes artisan and family owned small business... check out their website. Note: I have no affiliation with them.

      I thought, like you barelfly that grilling them a bit would have improved them, though from what I read, I should be able to achieve perfect poached shrimp, as is used in cocktails with this method. After thinking about it, I may have vac packed for too long before cooking with the baking soda in the bag; I will try next time with no baking soda.

    Here’s that rotisserie chicken I been talking about. Lemon pepper seasoning, in the fridge for about 20 hours uncovered, then roto’d at about 400 until a thermo read 165* in the thigh joint. The skin wasn’t AWESOME CRISPY, but it was pretty good. The chicken itself was outstanding.

      Had a tropical wave in Southeast Texas over the weekend so on Saturday just stayed indoors and cooked some seafoods. Took some Dover Sole and wrapped it around some blanched spinach with a touch of Parmesan and a few pine nuts. After marinade of EVOO and lemon juice, we seasoned with Tony C's and dill....

      ....nothing fancy or over the top, just a rainy day delight !! Served the scallops on top of a warm spinach salad with heirloom tomatoes along with the fish and some jasmine rice. Getting ready for a major Sunday smoke-a-thon !!!!

      Tried a new recipe today. Which means I need to go and rate it "on the other side." Did a meatloaf basically from Meathead's recipe, with a few changes because of things that my wife has problems with. Put some carrots and potatoes in the pan under the loaf. Meathead says it should take about an hour to get to 160, and I had my doubts about that, so I allowed more time. An hour more. Took two hours, which was almost enough time for the carrots and potatoes to cook. A little crunchy. Next time I'll cut them in smaller chunks. Meatloaf was great.

        Thanks! I just realized that its a good thing I put some butter on the veggies when I started. The processor who does our beef and pork grinds it really lean, probably at least 93%, and we rarely drain off any grease. Part of the reason we use them.

      Well, wife told me yesterday there was some chicken that needed cooking today out in the fridge. I went out there at lunch and found almost 13 pounds of freaking boneless skinless chicken breasts! One of my least favorite things to grill, and here it is National Cheeseburger Day! Argh!

      I sliced it up into strips, dry brined in Bad Byron's Butt Rub (lots of salt in that rub) for about 6 hours, and grilled on the Genesis in 2 batches. Simple, but everyone can eat it and dip in the sauce of their choosing.

      After my daughter got home I found out that half of the chicken was something she and her fiancé bought for themselves.... oh well I just made their lunches and dinners for the next several days!
