    I'll start by saying no pictures. I scored 2 lbs. of live mussels today. Never done on the grill until this evening. Recipe was Grilled Mussels with Garlic Butter. I have been making my own Garlic Butter for years. So that part was done. Simple; wrap scrubbed and rinsed mussels in heavy duty foil (tented) for steam. On grill 10 minutes. place mussels and juice in bowl. Melt butter add dry white wine and parsley, simmer and off heat. Use garlic butter for dipping. Dry white wine and french bread lightly toasted and buttered. Had with salad. Good stuff.

    Nothing special, actually an easy meal. But the flavors oh so good!

    Home made kraut and Caramelized onions on German style brats, the white sausage kind. Add a little spicy mustard and you get some goodness going on! Also made a sort of grilled Romaine Caesar type salad as the side.

    And it’s such a beautiful night I done this up all at the patio kitchen with a wonderful Belgian style dubbel!

    Brats with homemade kraut. Your talking my language​​. Have you ever tried adding caraway seeds to your kraut? I recommend it if you haven't.

      JTpellets no caraway seeds before, however how can that NOT be good! Just adding some of my favorite flavor of bread! Usually I just go with juniper berry and red chile flakes. I am going to be making a batch next week, so will add a bit of that. Thanks for the suggestion.

    Last nights polish sausage with peppers and onions on a griiled french roll with fried tators. Very good cook that we all enjoyed.
    Then I was trimming a pork shoulder for sunday and thr coals were still hot so i put on my lab coat. I got most of the fat cap off in one piece and due to my so so knife skills there were areas with meat too. I threw it over the coals and basted with sesame garluc ginger sauce. It turned out like a hybrid jerky/pork rind. It was good and i would have pitched it anyway. I would do it again if i had hot coals when i trimmed.

    My best ever, Boston butt.

    About 6#'s after trimming fat.

    Covered with salt and pepper the night before.
    Covered with mustard and Memphis dust the morning of.
    Aiming for about 250°

    Added some apple wood chunks spread out and 2 sweet onion 1/4s directly over heat.
    Spritzes with red wine vinegar and water and put meat on at 9:50am grill temp about 200.
    At 10:00 am:
    Grill temp is 220° raising fast so I closed down the vents a bit.
    Meat temp is 38° IT.
    10:15 - grill temp 251°.

    At 1:00pm:
    Removed meat.
    IT 154°
    Spritzed again and lightly sprinkled with Memphis dust.
    Wrapped in foil double think heavy duty with meat thermometer still in it.

    Put back on grill at 275° grill temp at around 1:10pm.

    2:30pm IT is 175°.

    3:45pm IT 202°.
    Removed meat from grill and poured charcoal out of slow n sear and added more charcoal to do corn and veggies.

    Letting meat set wrapped. Did not open it yet.

    Waiting on corn on cob and vegetables.

    About 5 to 5:15 everything is done.

    Best pork ever. #1 wow good.

    The glaze:
    Apricot BBQ Glaze
    1. 12oz BBQ Sauce, what ever I had.
    2. 4oz Apricot Preserves
    3. 4oz Honey
    4. 4oz Apple Cider Vinegar
    5. Combine all ingredients in a small sauce pot over Medium heat until mixtures smooths about 5-10 minutes.
