Pork loin on the Primo.
Roasted the veggies.
Added the pork.
Pork is done.
Separated the carrots, celery, onions, and juices for the sauce.
Sliced the pork.
Served over the potatoes with sauce.

Probably my favorite dish to cook. Paella on the kettle. Chicken, shrimp and mussels. Was a bit short on rice tonight, didn’t realize it until I started mis en plas but still, what a flavor bomb this is! Used roasted whole garlic in this that I smashed as it warmed up a bit. And enjoyed with My favorite bourbon, both during and after. Sorry the finished paellera photo is not the greatest presentation.

Found a 7# Double R Ranch brisket flat at my grocery store on sale for $5/#. It was already pretty nicely trimmed with about an 1/8†fat cap. Rubbed with salt and pepper and smoked on the PBC with some pecan chunks. This brisket was choice grade and I have to say this just proves that grade isn’t everything. This choice brisket was so much better than Costco prime that there is just no comparison. Costco prime has more marbling but this choice brisket still came out juicier and the flavor is so much better. Also cooked up some pinto beans with bacon, hatch chilies, onions, and garlic.

Beef ribs! These are the plate ribs I mentioned in another post a couple days ago. $6.00 per pound at Costco.
On the Recteq at 7:45 this AM at 250. A crisp 26 degrees outside then. 🥶 Off 8 hrs later followed by a 1 hr rest in the cambro. Perfect. Like butta! Although these only Choice grade you would never know it from how they ate. Winner. 👍

Red and green 'witch' hair. Made from beet sprouts and dill.
Just cooked low&slow on wood fire and smoke.
