    Made smash burgers on the DnG. Pepper jack cheese, roasted hatch chilies, tomato, habanero dill pickles, dank sauce (a slightly spicy tomatillo/nopal cactus sauce), and avocado on a bun from a local bakery. Served with homemade fries made in my air fryer.

    Allow me to try this again. Pecorino crusted rye. Way too much bacon. Red onion and mushroom. Two cheeses and cast iron. The grind tri tip is amazing!!

    Well, the first piece is done cooking.. took it out at 202 degrees and wrapped it, put it in a warmed up cooler and will let it sit for 2 hours. The other piece has about one more hour on the grill. Not great pics, its dark here.

      It turned out good I think... I used the smaller piece for the burnt ends and they were amazing tasting, well to me at least haha. Next time I will try to cook it without separating the two muscles.

        Thanks for the kid words everyone. JCGrill they are very easy. I just thawed out store bought dinner rolls and let them rise, then flatten, stuff with meat, seal and let dough rise for 30 mire min with meat inside. Then bake for 15 min. My mom always made these for use with leftover ham from holidays. I decided to try em with with smoked chuck

        Henrik I got my “thanks” pork rub on the fat guy that I did not trim and I have MMD on the other with some brown sugar. I was in a rush and forgot to add salt to the ribs so I just threw it on top of the Hanks pork rub. Should be OK. This is what I call a good start to the weekend off. I have company coming over later, some of my Chef friends.

        Sirloin tip roast 4.87#
        Yesterday I ...
        Trimmed fat.
        Salted and dry rubbed with cow crust pretty heavy with both.
        Placed on rack over pan and put a piece of plastic wrap on meat to preserve moisture.
        Placed a charcoal lighter in the bottom end of slow n sear and filled with Stubb's.
        Using drip n griddle and filling reservoir with water.
        Grill at about 225°until IT of 125°.
        1:15pm
        Put meat on as soon as grilled heated to 225°. Added two chunks Apple wood for smoke.
        2:20°
        IT 125°
        Removed lid and started searing by turning every so often.
        At IT of 135° remove it
        Sliced it like steaks. Unbelievable good. Some slices rare and some medium rare.
        Laid a couple back on grill for mom and wife because they don't like pink.
