    • Weber Summit Charcoal Grilling Center (WSCGC), PK360(graphite), Jumbo Joe and PBC. Weber kettle @ the hunting camp.

    Bought a used PBC for our hunting camp, so I thought I'd give brisket a try. This thing is a boss! I've never cooked one hot and fast, but the PBC performed perfectly. I wrapped in foil with beef consomme at around 3 hrs, 150F. The color was perfect and bark was set so I wrapped it up.

    14# B.A. packer brisket (from restaurant depot), trimmed and dry brined 14 hours.
    Used B&B briqs, with 3 cherry chunks buried under briqs
    OakRidge BBQ Black Ops rub with olive oil binder.
    10am-4:30pm cook
    Faux cambro for about hrs.
    Sliced and pulled meat at 6:30ish.
    cook temp was round 325-350F.

      After wrapping did you finish it on the PBC or in the oven?
      I hope you invited the PBC seller over to see what he was missing.,
      and did the PBC ever get to the hunt camp, or has it become a
      permanent and necessary fixture on your deck?

      Gator Lau , I finished it in the PBC, those B&B briqs were rocking solid the whole time. I did not invite the seller over, shame on me, but it wasn't likely since he lives 4 hours away. Yes, the PBC made it to the camp and we love it, it just makes cooks easy when you want to focus on hunts and can't sit around and baby sit a cooker. I do like babysitting, but hunting is more fun when I'm there

    Winner, winner, chicken dinner!

    There were more leg quarters cooking in a second grill, and I didn’t get a final pic sadly, as they started eating the chicken as I pulled pieces off!

    First time doing chicken indirect with the SNS and it did not crisp up the skin as much as my offset. But it was easy to toss a couple pieces at a time over the SNS to crisp on each side as they came off the grill.

      USDA Prime tri tip reverse seared on the PK. I really pushed the amount of salt on this to the limit, and got lucky. Even a little more and it would have been too much. But the heavy salt along with pepper, garlic, onion, and a little cayenne really brought out the beefy flavor. I’m not gonna lie - this was not only the best tri tip I’ve cooked, it was the best I’ve ever had period.

      Troutman I roughly followed Harry Soo's collaborative H&F video's he did with Baby Back Maniac and T-Roy cooks. Also, the PBC website. Considering the results and the time it saved me, I may not ever go L&S again. I'm anxious to try it on my WSCGC....

      Sunday night Chicken cook. Boneless skinless thighs with Jerk Seasoning, Bacon wrapped Asparagus, and Vale, SD Sweet Corn. Cooked everything indirect and finished over the high heat. All I did to the corn was run them under cold water and toss them on the grill. Turned out perfect!

      I'd do this every weekend, but it would probably kill me.
      Smoked at 225 for 4 hours and finished on the gas grill at high temp.
