    We had a Breast Cancer fundraiser at my place of work a couple weeks ago and I smoked 150 lbs of Kalua Pork over two nights. Used hickory and apple woods. Two long Cooks, a visit from a couple friends in the middle of the night and many compliments later, I was very satisfied with the results and we raised a lot of money for Breast Cancer!!

    Main course was a reprise of the fabulous seared fresh albacore loin that we also had last week. This time I applied a nice spice rub before searing. Served the sliced fish with a soy, ginger and lime sauce on kim chi rice.

    Mahi Mahi Acqua Pazza. Acqua Pazza translated means Water Crazy. Don't ask me, I didn't name the recipe - LOL.

    Green bean casserole made with fresh green beans and bacon, cheddar potato something. Both cooked on the Primo Oval Jr. Fish cooked on Komodo Kamado.

    Chicago Deep Dish gets all the attention, but Chicago Thin very similar to this is what I grew up with on the South Side. Homemade sausage nails the distinctive sweet Italian flavor I can’t get anywhere but back home in the Calumet region, or on my KK in my back yard.

    The “back to school special” at my daughters request - bacon cheeseburgers. 80/20 fresh ground chuck with black pepper, onion & garlic powder, and brushed with bacon grease. Homemade bacon. White American cheese. Unfortunately the buns were lacking, but we had leftovers from a party. Nothing a little Duke’s mayo can’t fix tho. Most importantly my kiddo is really happy on her last day of summer break!

      Polish Boys for dinner tonight. Hillshire Farms Polish Kielbasa smoked for 1 hr on CC se. Then seared on CC sear station. Being from Cleveland finished with slaw with Marzetti dressing,Bertmans stadium mustard and Sweetpotato fries all on a top split bun to hold it all together. Click image for larger version

        Smoke roasted lamb racks in the pk360 to 135F. Was going to use a fan to fire the coals hotter but decided to damp down and save the coals/setup for next time. Held the racks while I fired up a full chimney of insanity with fan.
        Split into chops and finished searing on that. (Escaped pics. Violent high flames means you are moving quick).

        Tonight was English style chuck short ribs with BBBR. Served with a frozen Brussels sprout. I don't recommend the Brussels sprout.

        So my plan today was to smoke a couple split chickens on the PBC and chop up the extra meat to put on salads for the week. However, plans changed when I recieved the following text from my neighbor this morning.
        "Hey guys. I took out 4 racks of ribs on Friday and only could fit 3 in my oven yesterday. So the fourth should be cooked today, I'm all ribbed out. I have Bbq sauce too if you guys want them."
        I gladly gave those ribs a proper burial! Ribs, chicken and corn all on the PBC. Thank you to good neighbors!
