    LOVE me some thick cut pork chops. These were porterhouse style too. Fired up my rectec for the first time since I got the KBQ. Actually was a lot of fun, and made me feel bad for neglecting my old pal. I got really lazy with the rest of the meal though, just white rice and some salad.

    My first go at bacon. Made a regular flavor, brown sugar/sweet bacon and a savory flavor with garlic, pepper and bay leaf.

    Dry cured for 9 days, rinsed and dried then dried in refrigerator over night. Smoked with a sweet blend of wood chips and a little sugar maple.

    The nibble test showed good results thus far. Nice hammy texture. Going to let sit wrapped for a few days and slice up this weekend.

    Every Thursdays are burgers for me. Today I tasted this @holandeserrantebbq burgers in El Salvador. They were pretty legit. A well-done smash burger. Cheers!

      NoogaQ I've gone through 3 Anova circulators and I think I'm done with them. Clumsy clamps.

      Go with Joule. I'm loving Joule, much better built. Feels very premium.

    Picked up some fresh wild caught king salmon yesterday. Hot smoked on the rectec at 250*. mmm mmm good!

      Your correct Troutman its italian pickled veggies. Commonmy found on chicago style italian beef sammies. You can find it pre-made at most grociers in the pickle aisle. However Fresh Thyme is the only grocier near me that carries the hot variety.

    First cook on Little Red Riding Hood today. Reverse seared a couple of rib eyes! Should have pulled a minute earlier. Forgot to account for carry over. Still melt in your mouth delicious though! Love that charcoal flavor!

Wife doesn’t like cooked onions or peppers so I left them out, but added Sweet Baby Rays before cooking. Since there are only 2 of us plus 2 smoking buddies/taste testers/ beggars, I made 4 loafs. Cooked 2, one for us and one for a friend that just had surgery, and froze the other 2. Turned out great!

      Holland grill thermometer

    First ribeye on my new mes smoke ( a guy has to start somewhere). The steak dry brined 2 hours then seasoned with BBBR. Smoked 1 hour @215 with Amnps and hickory pellets. Then seared on grill grates 2 minutes each side then 1 minute each side. Interna 132. Melt in your mouth good.
