Finally I stopped long enough to take some pics! I never got around to the cream brulee in the sous vide - I keep forgetting to get a torch - but I did beef ribs for brunch today. 30 hours at 150 in the Anova, right to the WSM at 225. Seemed to stall at 157, so I kicked it up to 260. After about an 1/2 hour, they got up to 190. The better half was looking hungry, so I pulled them and wrapped them in foil. Made Clint's Meaty Beef Ribs with Rosemary Red Wine Sauce, served it with some grits and over medium eggs. The better half finally forgave me for sneaking the Anova in with her Amazon order...

Next time I will add a corn starch slurry to the sauce to make it a little thicker, but other than that I can't think of a thing that I would change.

Its been a while. Got to cook a good meal today though. My ribeye was a bit overcooked as i tried searing off on cast iron grill grate directly over the charcoal starter. Once I learned it wasn't working like i imagined i used a regular steel grate and the girlfriends steak was cooked to perfection. Still a great meal for me. potato and asparagus where a great compliment. As well as the wine i hadn't poored yet.

Home Built 55 Gallon Ugly Drum Smoker - "MUDS"
Too much rain in the forecast so I made some Jambamlaya under cover today. Cooked it in the dutch oven over coals in an upside down old Weber kettle cover , sauteed scallops in CS on Smokey Joe, shrimp in CI on bottom of WSM 14.5. Ran out of cooking space so I did the cornbread in the oven. Fun and tasty!

It's been an interesting summer to say the least. Lots of travel for fun and family. Significant heartache, but a lot of joy too. Not nearly enough cooking! And it's all flown by. As a result I have not been as active as I would like in this great forum. But I'm going to take care of that as we move into late summer and head toward Fall.
