    Found these strip beauties on sale at my grocery store when I was lookin for pork loin or loin chops this morning (not on sale). So steak it was! They weren't even marked Choice, yet they look like Prime. Couldn't pass up. $7.99/lb is no steal, but it's half what anyone else would've asked for these.

    I trim off all outside fat from my steaks & chops, that way there's only 100% edible steak on my plate.

    Front seared using only hot charcoal and Henrik's Bonafide Beef rub. Got a light dry brine about 10hrs before cooking.

    No finished pic, too ravenous. Henrik's beef rub is an excellent steak seasoning if you ask me. Only thing I add otherwise is another shake of fresh ground pepper, me likes pepper.

      Great buy, love it when you find steak that well marbled for under 10 bucks a pound !! I tried the Henrik beef rub on some fajitas last night and agree it's pretty good !!

ID:	549098 So my wife won’t let me ever cook lamb because...well because she loves them and thinks they’re cute. She’s out of town so naturally...I made some lamb. Picked up a lamb shoulder bone chop, made a paste in my mortar and pestle with garlic, salt, sage, thyme, rosemary, oregano and olive oil. Rubbed it all over and let it come to room temp for about an hour and a half.

    Set my stargazer to to medium high heat, let it come up to temp, seared the first side for about 2.5 minutes.

    Flip and sear another 3 minutes, reduce heat to medium and cook flipping every 4 minutes or so for another 8 minutes.

    I didn’t check the final IT, but it came out a beautiful medium rare-medium. (I don’t like lamb too rare)

    Before it finished though I put in some Sherry and got some flames goin for a tad bit more flavor and mostly...for fun. This was my first time doing a flambé and I was for sure pleased!

      I love lamb, so does my wife. My son loves it enough that when he still lived at home he would bring home lamb for us to cook. He learned to love it when we lived in South Dakota and had friends who raised lambs. Got at least one lamb a year when we were there. Been harder to source here in Iowa. Most of the lamb around here is from New Zealand.

      JakeT I apologize for not getting back to you sooner. I've grilled lamb chops, done roasts in the oven, after marinating overnight. The last couple of times I've done lamb has been for Seder services. Everyone was just going to get a few pieces, so I have cubed the roast, marinated the cubes and coated them with olive oil, and stir fried them. Been a few years, probably smoke it now.

    Sometimes, you just want chicken for dinner. Spatchcocked, smoked on an offset using charcoal and oak chunks and splits. I hate that the skin split some, but running at 325-350 for the 2 hour cook make for PERFECT skin. The leg quarters and wings were to die for - the skin was as crispy as I've ever had coming off the smoker. Breasts on these 5 pound birds were too large for one person, so ended up getting carved up. Fed 10 for dinner, and have lots of left overs for tomorrow...

      Funny thing is I did not brine in advance or anything this time. Just rubbed down with olive oil and a heavy coating of Lawry's poultry rub, which has a lot of good spices in it, and hit the smoker.

      Jalapeno Poppers with Chive and Onion Cream Cheese Shrimp and Mango wrapped in bacon with my favorite beer for an appetizer. Cooked in my Memphis Pellet Grill at 375 until the bacon is crispy. Dinner was sous vide steaks (Anova at 130 for 1 hour then seared on my Kamado Joe at 800 degrees. Loaded baker wrapped in foil on the memphis with the poppers and grilled in the husk corn on the cob with Lawrys Garlic Salt and Parsley and unsalted butter and a nice Merlot.

      Bread pudding made with Roundrock doughnuts. Topped with homemade chocolate sauce. Usually made in a dutch oven, but the girls wanted to help, so we made it in a pyrex dish and the oven.

        Day 3 of my Green Mountain Grill ownership... Pork Loin and smoked mac and cheese. First time doing these as well.
        I put a dry rub on the pork for 24 hours then cooked it at 225 for about 2 hours, then put a apricot glaze on it for the last 30 minutes till it was at 145 internal. The Smoked Mac and cheese tastes good but I really had no idea what I was doing, would of liked it to be crispy but didnt turn out that way.

ID:	549516 Smoked my first chuck roast today. Blade roast. BBBR and smoked at 235 with pecan on my kettle using my SnS for 7hrs. Last hour was wrapped with beef stock once the bark set. Brought temps to 300. Got the roast to 208. Put it in a faux cambro for one hour. Pulled it out and chopped it up for sandwiches. Click image for larger version
