      I know I make damn good BBQ cause my 3 dogs have NEVER said no to it. (OTOH, my 13yr old says no to just about everything, except my ribs.)

    My wife said fix her a melt-in-your-mouth tender steak with a veggie and potato. What I served up was a reverse-seared prime ribeye, steamed asparagus with Hollandaise, and a twice baked potato.

      Looks very much like a lot of the meals we have had lately. Not to slight the rest of the meal, because the pork chop looks great, but there's nothing like fresh sweet corn and potatoes that have just been dug.

    it came out pretty and smelling fantastic. we cut off a piece and cooked it up. the thin side was way too salty but the thick side was just right. i hope it's just because it was the outside because if it is that salty throughout we might have to soak these before we eat them or something!

    Needed to try out Hank's Bona Fide Beef Rub that I just received. Sous vide short ribs 144 F for about 24 hours. Shocked in an ice bath for a couple of hours. Then applied the rub and went on the smoker for about 3 hours. Made a simple red wine sauce with the purge and sauteed shallots, carrots and garlic. Served up with grilled corn on the cob (boy, I love summer) and some leftover cavalo nero calabrese.

    The ribs were fantastic. Nice and moist and tender, with a texture like very tender steak as opposed to braised meat. We really enjoyed the rub. It complemented the meat nicely and did not overpower it in any way. Good job Henrik ! I'm usually a fan of just salt and pepper with beef, but this has made me a believer.

      As I mentioned, we think the rub is a winner. Great flavor that complements the beef, but does not overpower it. It is enough to convince me to leave the simple salt and pepper that I had preferred on beef up until now.

    Took an beef arm roast today and made burnt ends. I've done chuckie burnt ends a couple of time previously, but my mom hasn't had a chance to try them. We are leaving later this week for a 10 day vacation, and she gets stir crazy in the care center where she lives if she can't get out every few days, so she has had at least one meal with us for the past three days.
