    My grocery store had Double R ranch New York steaks on sale. Got this 1 1/2 # steak for $11! Reverse seared with a little oak. Served with drunken mushrooms and sweet corn.

      One and a half pound new york steak for $11. It was about $7 a pound. Double R ranch is the northwest beef you can get from SRF, it’s their non wagyu beef. It’s really good quality. My local grocery store carries it as well as SRF wagyu, but the wagyu’s more like $22/#.

      Went well together. I was taking bites of elk and peach at the same time. My girlfriend saved the peach for last as desert which made sense because the peaches had butter and brown sugar on them.

    Simple yardbird on the Smoke Vault last night. Spatchocked, Simon and Garfunkel rub, 1 chunk of hickory. Two hours at 350. It was great - crispy skin, moist meat and wonderful smoke flavor.

    It's been a busy summer, so I've still been cooking but no time to hang out in the pit. But here's some roast beef I did on the PK Grill with Cowboy lump charcoal. I used a simple rub of salt, pepper, garlic, paprika, sugar and some olive oil. Low and slow to 120-125 internal, then opened up to get the coals hot and seared off the outside. I would have gone for a little darker sear, but was worried about overcooking the inside. Turned out great both fresh and as leftovers (which I'm enjoying right now). Right after this pic, I switched knives and my slicing improved.

    I had to get a new phone a month or so ago. this one allows me to d/l photos to my pc, so I can easily take photos of cooks now. However, they are not as good as the photos taken with my dslr. I'm thinking poor quality photos are better than no photos though. Here are some front seared filets with sauteed m'rooms and new potatoes with garlic and onions I made tonight.

    I prefer a front sear because it's easier to control the final temp when cookin' "low". These were pulled at 138*. That appears to be at the tail end of med rare.

    Tried a new recipe tonight. Pork belly. Glazed with mascerated blueberries and brandy. I would probably blend the blueberries next time, but this was tasty. Served with grilled zucchini.

      Cooking for a small party today. Granddaughter's first birthday. Those who dont know any better think I dont have enough meat for everyone, 18 lbs pork, 39 legs,4lbs of moink balls. They went and got 20 burgers and some hot dogs.
