          jgreen From what I have seen wet ribs just means finishing with a barbecue or some other kind of sauce on top. I'm not a huge fan of barbecue sauce so I usually just cook them with only rub which are usually referred to as "dry" ribs. If i'm wrong please somebody correct me. But this time I did choose to put a sauce on them and let it set in for 30 minutes on the kettle grill.

          Thermometer: Maverick ET-732 and XR50
          For smoking, I am a committed stick burner.
          For grilling, it's all about charcoal. Almost always HEB brand mesquite charcoal. If not that, then Kingsford mesquite charcoal.

        HEB Prime 1 Sirloin tonight. It's what's for dinner! Reverse sear to 135. Loved every bite.

        Did a rack of spares on the PBJr. and an experiment on the SnS.

        I'd taken a rack of spare ribs out of the freezer a few days ago thinking i'd do them mid-week, then realized I've got to much going on next week so it's either today or risk them going bad. So they got rubbed with Famous Dave's Rib Rub and dry brined with that for 2ish hours. Rubbed up part of the tips for snacks also.

        Char Siu Country shoulder ribs. Wrong cut for this, but it was cheap and more about seeing if Meatheads' Char Siu rib marinade is a good starting point for what I have in my head.

        4 hours later sauced the spares with Stubbs Spicy:

          Last night's dinner. Boneless RibEye. After I trimmed the external fat was 12 oz. Dry brined 4 hours, cooked at 225 till internal temp 135. Then reverse sear. good texture and moist.

          • Old Country offset smoker, 22” Weber Kettle, 4 burner gas. Oak logs, Royal Oak Lump, Kingsford Briqs, Gas.

          Recently finished my first large cook. I was asked to prepare the protein for our department picnic this year. I smoked up 5 pork butts, about 43 lbs. in all. Did a dry brine for 24 hrs, injected, and used the Memphis Dust. Smoked between 225° and 250° for 11 to 12 hours, wrapped around 160°, held in a cooler until the picnic, and shredded on sight right before serving. I could not have been happier with the way it turned out. What wasn't eaten during the picnic was taken home by a half dozen or so people. There wasn't a speck of pork left at the end of the afternoon. I want to take a quick moment to say thanks to everyone in The Pit for your constant feedback and encouragement on this site. As little as a year ago I would have never agreed to cook for anyone other than my immediate family. But through practice and the knowledge I've gained on this site I can't wait to do something like this again. Cheers to all of you.
