      For smoking, I am a committed stick burner.
      For grilling, it's all about charcoal. Almost always HEB brand mesquite charcoal. If not that, then Kingsford mesquite charcoal.

      Cooked it about 4 1/2 hours at ~250 deg to an internal temperature of 200 deg. It was tender, juicy and awesome. My wife and I left embarrassingly few leftovers. Just barely enough for lunch tomorrow.

    • We have two weber kettle grills (one LARGE and one small/average), the SnS and the Weber Smokey Mountain 18" smoker. We use both natural lump charcoal and KNB for smoking and measure our temps with a Maverick 733, thermopen and MK4. Favorite beer depends on what is cooking (alt answer is yes).

    Here is my first go at pork belly burnt ends.

    Pretty durn good, if I do say so myself. Will do again! Sorry for the low quality pic, I was in a hurry to start eating!

    My wife is working a weekend shift, I needed to keep the kiddo busy all day. She’s been asking to graduate from hot dogs to burgers... 💡 So, I took her thru the whole process from cleaning the cooking grate on - and she did great, I kinda thought she’d lose interest along the way, but no! Fun way to spend a couple hours today, and a good cheeseburger in the end. And that’s Dukes mayo btw. 👍🏻

    Kai Yang Chicken with Tamarind Dipping Sauce. Start the sauce by sautéing shallot, Serrano, and lemongrass.

    Then magic happens and, boom! Sauce! (I.e., didn’t take any other saucemaking pics)

    The chook brines for two hours in a soy sauce, fish sauce, cilantro, lemongrass, etc. mixture. Then onto the roti with a pineapple. The pineapple is sportin’ Dizzy Pig Pineapple Head, which I’m told is all the rage in Thailand.

    I just pulled the Chuckie and the pork shoulder off the the BGE. Needless to say, I've got some bark! I have yet to pull either, but I cut some of the chuckle off and cubed it up for dinner. (I couldn't wait.) And it was moist and tender as all get out. This was a long cook at 225 F but it was well worth it. I had a great day on the patio.
