Hey Bonsey. What time is that ready? I was thinking chuckie to go with the blues hog Tennessee red I bought. I hope it goes with beef. I'm craving chuckie on Tuesday or Wednesday.

    Peace brother!

I put on a 15 lb snake river brisket last night. The vault is holding steady at 230. Should all be done around noon today. Never had product from snake river but they had a 2 for 1 sale which really made the meat half price, still expensive. Hope its good.

Done at 11:00. Let it rest in a yeti cooler for 2 hours. Sliced great, great meaty flavor. What’s with yeti cutting out the NRA... not happy

Gotta love the Bison! What's that like? Is it a beef flavour, or more gamey?

In general, tastes ~ like beef. Some claim it's a bit sweeter, but it's definitely not 'gamey', to answer yer query... MeatMonster
It's much leaner, so attention must be paid to not overcook it...

I’ll take the bison. Local bison rancher just opened a storefront here, I’m dying to check it out!! Good luck with your cook !!

Bison is actually less "gamey" than beef. It’s leaner, lower in cholesterol and calories, and to my palate, tastes a little bit sweeter.

I love eating Bison. Since I went to NDSU I guess that makes me a canibal?

Bonesy, heading to your neck of the woods tomorrow, flying to Wichita, driving from there to Dodge City .
