Generally you steam first and then slice but I’ve sliced cold leftover pastrami and then steamed to serve and it worked well. You’ll also get cleaner slices cutting it first. Assuming it was fully cooked on the smoker, I don’t think it’ll make a ton of difference except for the time needed to steam.
Be nice if you could slice and keep everything upright kinda like a spiral ham, then steam so folks could just come grab slices like their ain't no tomorrow.
