        MLW has a good one but as I'm sure for a lot of us , pasta seems to have pretty much disappeared from our menus. sad.

        That's easy. This thing, extracted from Northern Italian Nona's held in captivity in some basement, is a priceless recipe. I haven't smoked it yet, but I know it will be awesome. Use prosciutto where it says ham.

      I picked up two Snake River Farms American Wagyu corned beef packs from Costco. I think I'll try one on the rectec, any suggestions? I was thinking 225 for a couple hours then put it in a pan and wrap with foil? Rub suggestions?

            Gonna make corned beef hamburgers. I have a store bought 2.5 lb pre packaged corned beef flat. I'm going to grind it Saturday afternoon. Got some smoked Swiss cheese, kraut and I'm picking up my marble rye today. Gonna make home made dressing for the patty melt.

            Plan an on first cooking the burger indirectly on the Weber adding a little smoke. Then I plan on searing on my Blackstone griddle to finish.
