    Faux cambro....

    How long can a faux Cambridge keep something warm..... my cook finished long before I planned

    Depends how well you packed it. I've gone 5+ hours.

      It's in tight and putting hot towels in periodically

    One thing you can do if it’s going to be long is put a remote thermometer in. Leave the Cambro closed up tight until the meat temp drops to <150F. Then you can put it in an ocven set to warm or a crockpot with a "keep warm" setting.

    I’ve seen it go over 4-hours and be fine.

      Yep. My oven can go to 170F. I go back and forth between the cambro and oven. 6 hours even.

    Wow.... brisket in for about 10 hours now and reads 153° on thermopen..... should be tender

      First real cook on new WSM 22... cooked a tad faster than I planned....... but didn't cook real hot like they say they do before broken in real well

    Little too mushy on the point..... but two 16 pound briskit and two 10+ pound pork shoulders gone in 45 minutes?.... California, at least Sacramento doesn't know good bbq.....they all loved it....haha

      I tried an oven a few weeks ago. Placed two wrapped pork butts in at 170 to wait two hours for dinner. Best pulled pork I've ever made. I could not believe how easily those pulled apart. I'm likely to use the oven in the future when possible.

        I use mine all the time. 170 melts butts and briskets like butter!
