Brisket and Butt

    Brisket and Butt

    WSM...9 hours into the cook. Brisket at 176. Butt is beneath stalled at 167. Cooker temp averaged 238 through the night. I am using the Party Q controller. Guests arriving at 2:00PM.

    I am debating whether to wrap the Butt or wait it out. Cranked temp up to 250 to try to move the butt along. Click image for larger version

    FWIW I say wait a bit.

    are you shooting to have the butt in the cooler at 12:30ish?

      that FWIW In other words just my opinion. I think your right on with 9:30. I had 10:00 in my mind but your safer at 9:30. troymeister

      If it by some crazy way hit temp to early and you dont want to go to the cooler you can drop the cooker down to 160 and hold it for a while in the cooker.

      I stoled the trick from Huskee. He calls it "power cambro" lol

      Thats a good Idea...I have never tried that. Now off to make some sauces and some slaw.

      I think you will be fine. You have 6 hours until serving time. That butt will move along after a few hours in the stall. Nothing wrong with moving temp to 250, imho.

      Are you going to wrap the brisket?

        I didn't wrap the brisket. It is foiled now in the feaux cambro. The bark right of the smoker was killer.

      FWIW, IMHO, JICYMI and BTW..... I can't make it by 2. Looking good. At 250 the pork will pull up the rear rather quickly.
