    Cast iron pot as a faux cambro?

    Has anyone tried resting a brisket in a large cast iron pot? Does it work well?

    I think Spinaker might be best to answer your question. He seems to be the CI guru here. Hopefully he will chime in soon.

      CI doesn't Conduct heat as well as other metals, but I wouldn't think of it as an Insulator. That said, if you had a way of keeping it warm, a Dutch oven would hold in moisture reasonably well.

        I certainly Don't conduct heat as well as CI. But CI is nowhere near as good a conductor of heat as aluminum.😅

        That might be interesting. That is how I make yogurt, only I use a stainless pot & a winter parka.
