    Your top 3 AR Recipes?

With all the recipes on AR and in the "Meathead" book, there is a ton of experimentation to be had. As the spring/summer season gets going, I'm curious of the veteran opinions - which ones are your top 3 "you've gotta try this!" recipes if you've never tried any of them? I'm getting hungry just thinking about it...

That would be pastrami, pastrami and also pastrami.

I'm with doc. It's a lot of waiting, but it's worth it.

    This is a great Topic!

While I do agree with Kathryn, 100%, I will give you three separate recipes as my favorites.
    1) Beer Can Chicken. (Just kidding)................
    *****************************************
    1) Close to Katz Pastrami (ABCBBQ DAVE Style)

    2) Schmancy Smoked Salmon

    3) Last Meal Ribs

Obviously I love brisket and pulled pork but I kinda think those are general BBQ recipes. These are just a few of my AR favs!

I can remember BAR (before Amazing Ribs) when my beer can chicken was the rage. Spinaker, you got a good laugh out of that one, one after the announcement & two, after "the just kidding".
For me: 1. Wast meal Wibs (I just can't help myself, I am in a Fuddian episode of my life) on my PBC. 2. Evwey body woves the S&G chicken, spatchcocked of course. 3. Dave's Wib Eyes have snuck up there. (ABCBBQ Dave formerly PIT BOSS)

1- pastrami - worth the time and effort
2- MMD - takes my pulled pork to another level
3- Texas beef brisket - I looooove beef.

            1) Pastrami.

            2) Turkey.
(I'm surprised this hasn't gotten any votes yet. This is really close to the pastrami for best recipe on the site, I thought pretty hard about making it my first choice. You think you know turkey? This is out of this world good.)

            3) Kansas City Classic BBQ sauce.
(Of everything I've shared with others, this is the one that gets the most comments. I add the tamarind paste, and use a little less vinegar.)

More than recipes, the things that I value AR for are technique related: dry brining, reverse searing, the idea that a flat surface (GrillGrates) is often better than a ridged surface, the importance of monitoring temperatures, …these are some of the things that have taken my Q to the "next level". AR also introduced me to baking bread--something I'd have NEVER thought I'd do. And, finally, the ease of access to super-bad, ultra-corny jokes ala Spinaker , RonB , tbob4 , Mr. Bones, et al.

                As for recipes:
                1. Steakhouse Steakburger (Hey, now my burgers aren't just about condiments hiding dry meat)
                2. Pastrami (So cool to make something like pastrami AND do it so well)
                3. Stella Culinary Sourdough Boule (Thanks, Breadhead !)

                Brisket
Pastrami (cooked exactly like brisket though, I like not steaming)
                Cornell Chicken (thighs)
                Burger Glop

                I can't count.
