Made 5 sourdough pizzas last night on the WCS. This time, I got it up to maybe 800°F. Cooked a white pizza in 100 seconds. The parchment paper is a nice trick and it allows for you to have several pizzas ready to cook.
Looks great Fine Swine ... I like cooking pizza at high temps! Parchment paper is a helpful tool for sure.
Your other option for parchment paper is a silicon baking sheet. They come in rectangle shapes. Just cut it in a circle 1" wider than the size pizza you usually make. It's much easier than parchment paper because you can wash it in your sink and use the same sheet forever. No need to tear off a piece of parchment paper and trim it to size every time you make pizza.👍
