Well, earlier this week I picked up a large Delmonico steak for a reasonable price for my wife and I to share. Last week I acquired a Sous Vide and since it's cold and rainy today...perfect opportunity to try it out. Based upon what people have advocated here and a quick on-line search I settled on 131 degrees for an hour and a half. I must say, it turned out really good. It was very tender (more so than I've ever achieved on the grill) and had a really nice crust after a quick pan sear in a very hot cast iron skillet. I cut up a bunch of broccoli, tossed it in a bowl with a little water and nuked it for 5 minutes. I cooked 2 russet potatoes in the oven and used a technique I learned in 'Cook's Illustrated'. It was a nice weeknight dinner cooked completely indoors.
