Smoking a turkey on Easter. Never have done anything with the liver. Got any ideas? I like chicken liver with onions and was wondering would that work? Or is turkey liver different? Thanks... Tom

Cut into thin strips, then dust in seasoned flour, fry till crunchy in fat. Fantastic! Or, use when you make stock as an adjunct to ad umami flavor. Or, chop fine(or grind), and add to stuffing for fowl or fish. One obvious use is to make pate, although you need a lot of liver to do this. Use, along with bacon or sausage, to make gravy for biscuits and gravy. You can use turkey liver the same way you would use chicken or duck liver.
