Made the maple smoked bacon from the recipe on this site. Followed directions to the T. 4# slab of side meat, Brined it 11 days and smoked with oak on the stick burner. Internal was 165 deg. when I took it off. Ate one end right off and put 4 slices in the frying pan. I'll never buy store bought bacon again. This recipe was spot on. Best bacon I ever had. Thanks Meathead.
