I do this and it's very, very simple. Any leftover smoked salmon, remove skin and bones and break up into chunks. Stir in whipped cream cheese and chopped chives. A bit of lemon juice if you want, but I don't think it's necessary. Don't over stir -- you want to see pieces of salmon. Pot and cover, store in the frig until you want some on a cracker. You can also shape into a ball and cover the outside with toasted almonds, or your favorite covering. More chives and seasoned Panko would be nice too, but panko will get soggy if stored for long.
