Have yet to do one of these, my extended family prefers hockey pucks when it comes to beef and I won't do that. Doing ham and turkey and look forward to buying up all the scraps the day after.

Dr ROK I prefer the Meathead AR technique. Low and slow with just a hint of smoke in the background (I use 2 oz. of apple or cherry) until I hit 125 then I sear it, turning a quarter turn every 30 seconds. Will be using the SnS this year instead of the Smokenator and a separate grill to sear.
That video also says to tent the meat, which has been proven to be not needed. I have everything on the table ready to go THEN I quickly carve the meat.
