    Montreal Smoked Meat recipe

    Has anyone posted a Montreal Smoked Meat recipe? I tried 'search' and couldn't even get a hit using only the word 'Montreal'

      Here is the rub recipe we use

      • 2 tablespoons peppercorns
      • 1 tablespoon paprika
      • 1 tablespoon coarse salt
      • 1 tablespoon dried garlic or granulated garlic
      • 1 tablespoon dill seed
      • 1 tablespoon red pepper flakes
      • 1 tablespoon onion powder
      • 2 teaspoons coriander seeds
      • 2 teaspoons mustard seeds
      Grind everything together.

        As I understand it, there’s the dry brine with nitrates, then afterwards the rub. Is this list above for the rub during the smoking, and if so, how do you brine? Thanks
