Scotch: Current favorite- The Arran (anything by them), Glenmorangie 12yr Lasanta, sherry cask finished. The Balvenie Double Wood, also like Oban 18yr, and The Glenlivet Nadurra (Oloroso sherry cask finished) among others. Neat please.

There really seems to be a blossoming interest in the subject here, I wouldn't rule it out. Let's see what Pit Boss thinks, we just might see it pop up!

We like to encourage folks to read Meathead's cautionary article about it, (if you haven't already) so you have a firm grasp of the true scope of the endeavor. This isn't to deflate your balloon but more to open your eyes to what could potentially pop it in the professional foodservice industry.
