Maybe I am just trying to justify my purchase in my own head, but I am happy to pay $500 and make a few fixes that will cost a few bucks then pay $600 or $700 with no hassles. I can see the benefits of paying more for no hassles, but all in all it is a great cooker when it works! Thanks for the great and thorough review through the whole process!

GrillGrates used to sell a lot of full coverage sets for pellet grills, but in the past year or two I have seen where they seem to recommend just getting a searing station of 2-3 panels to put on top of existing grates to not interfere so much with airflow on pellet grills.

I went with super heavy duty stainless rod grates and am pretty happy. I talked to the grill grate fold and they warned that since it gets so hot indirextbthat the GrillGrates would need to be on top of the other grates. Not a removal and direct fit replacement due to possibility of warping at high temps.
Turns out they aren’t really necessary. If you need a flat surface for something you can always use CI.

I really like my 560..cooks great...i have to admit i get worried about stuff..so i bought 3 new switches..so far all has been ok on that issue..have them just in case...i did have the burn thru..so i added the ss inserts you buy after market...and a deflector over the manifold with drip pan holders...i do a real through cleaning every month on this one...i see now they have come out with a rotisserie kit. has anyone installed this...also a 800 model..with a griddle...
. I do like it..a lot..cooked burgers/chicken/brisket ribs/pork belly etc on this...
. i still do my steaks on the PK..and use my green egg..and griddle a lot..my barrell house has been on a very long break...
