How to convert a WSM into a Santa Maria grill

BB Maniac has this down! In principal, any ole grill and a wood fire will work. I never thought about using my ole yard ornament WSM to do it. been thinking about reviving the WSM to do this soon!

Interesting. I find that just doing them on my kettle set up over direct heat with a log on top of the coals to sear, and then moving to indirect works perfectly. Thos Santa Maria grills though do look spectacular.

That's really a clever way to use a WSM, must also try some time. I love the BB Maniac videos even if he uses 25 words when 5 will do. I've used this idea with my fire box on my stick burner many times in the past, guess it adaptable to anything that holds logs and has a grate. Just don't have the adjust ability, quite frankly other than it being cool and sexy, don't think you really need it.
