What sad news of Rob’s passing. By coincidence I was watching an episode of Man vs. Food about 30 min ago and Q39 was featured. Go figure.
But I want to know how he got a whole brisket don in 61/2-7 hours cooking at just 225-235. Ok he wrapped in foil at the stall. But still.

A takeaway for me going into my 5th year of BBQ hobby is matching seasoning with sauce. For example, last night I smoked chicken legs, which looked really good, but the savory seasoning and BBQ sauce did not go together well.
