    Easy corn chowder recipe

I just had this for dinner tonight and am pleasantly surprised by how good it was, I got the recipe from the “green Chile bible” , I ended up adding an extra can of the corn , extra onion and a full pack of bacon.
Next time I will probably add extra green chiles and fresh garlic to amp it up a notch, also homemade smoked bacon would be fantastic.
I cooked the potatoes by them selves until tender then added everything else and simmered for an hour.

That looks good, a good excuse to thaw out some of my roasted Hatch chilies.

I've never been sorry the times i've doubled the bacon. most recipe's call for too little bacon.

FYI, you can make this recipe even faster (or slower in a crock pot) using bagged frozen cubed potatoes or potatoes O'brien. comes out pretty good.

My wife is the soup maker of the family and makes something similar to this. She actually suggested potato soup for dinner last night, but I told her it was too warm for hearty soup like that and I want to savor the early fall weather for a bit longer

so, she made chicken and rice soup instead!

Thanks for sharing your recipe here.

Thanks! Soup season is definitely upon us and I’m looking forward to it.
