Current cookers Weber Spirit 3 burner. A 22" Kettle with vortex SnS and OnlyFire pizza oven. A Smokey Joe and the most recent addition a Pit Barrel Jr with bird hanger, 4 hooks and cover. ThermoWorks Smoke 2 probe, DOT, ThermoPop and a Thermapen Mk4. Recently added 2 TempSpike wireless meat thermometers.

I did try this recipe at Christmas and received great feedback, but your post is more my preference.

Tell us what you think. The 5 onions bring a unique taste blend. I really like the shallots and scallions in there.

OK, so I made this yesterday. I've never used Vidalia onions before. They are much sweeter than I imagined. The dip came out very sweet. I think the amount of salt necessary to turn it around would drive my blood pressure through the roof. As yellow onions are also somewhat sweet, it was too much for me. I'm thinking maybe cut back on the Vidalia onion, forget the yellow and substitute a white onion? And this makes a lot of dip! I'd probably cut it in half. Of course, this is just my opinion.
