    Montreal smoked meat

    For those of you that haven’t visited Montreal, there’s a version of pastrami served there that is heaven in a sandwich! I’ve always wondered how it was made, and a Canadian YouTube channel that I watch frequently has answered the question.

    It appears to be a 1.5 week process, so it’s not for the faint of heart, but trust me, your patience will be rewarded (to quote Alton Brown).

    I might try this the next time I have some vacation.

    That's about how long pastrami takes if you are starting from brisket. Dry cure here, I've never done that.

      Montreal smoked meat is fabulous. Visited for two weeks, and had a smoked meat sandwich almost everyday, and never at the same deli. All great. Thanks for the posted link.

            +1 on Montreal smoked meat. We have an office there and I eat way too much of it whenever I go. The bagels in Montreal are also epic. The crispy crust they get when they bake them is awesome!

              Dewesq55 andy.wpg Guess I should have known that statement would draw some strong opinions. Have eaten dozens of bagels from both places and would kill every morning to get a decent bagel from either place. As to the best, I will leave that to more refined palates than mine...as long as I am on the judging panel!!!!

            About 5 years ago I purchased a Jewish comfort food cookbook - The Mile End cookbook. It’s a deli in Brooklyn, but it serves Montreal style pastrami since the owner grew up and went to college in Montreal. He tuned his pastrami smoking on a WSM. Cookbook has some great recipes. The Matzo ball soup is also very good.

              Mile End Deli in downtown Brooklyn has fabulous food. But just try to get and eat a sandwich during your lunch break. Fat chance!
