HI - just made the home made Pastrami out of the homemade corned beef per the recipe (cured in the pink salt) and wonder how long the leftovers will last if I vacuum seal them and put in the fridge? thanks much!

Since it is cured, I would be tempted to treat it like home made bacon.... then again, you soak it in water to desalinate, removing some of the sodium nitrate, so, I am ..... not sure?
If you were to treat it like home cured bacon, I would use within a week, or freeze.

I'm not a food safety expert. As jfmorris says, usually you desalinate, so while it is cured, it's not like you are preserving it long term. But in a fridge vacuum sealed, and still somewhat cured, I would be tempted to go longer than a week. That's me, I like to live on the edge.Last edited by JCGrill; March 17, 2020, 03:40 PM.
