    Smoked Mojo Pork or Jackfruit

    Smoked Mojo Pork (Jackfruit is down lower)

    Ingredients
    • Full bone-in pork shoulder, do not trim.
    Dry Rub
    • 2 Tablespoon granulated dried garlic
    • 4 Tablespoons dry oregano leaves
    • 2 Tablespoon or more, to taste ground cumin
    • 1 Tablespoon or more fresh ground pepper
    • 2 Teaspoons chili pepper or Chipotle (use none or as much as you wish)
    • 1 Tablespoon salt
    Pan Juice Sauce
    • 1/2 cup frozen 100% orange juice concentrate
    • 1/4 cup lime juice
    • 2 stems cilantro or 1 teaspoon cilantro paste from tube
    Instructions
    • Mix dry spices for rub.
    • Pat dry pork shoulder with paper towels
    • Rub pork shoulder with oil, orange flavor olive oil works great.
    • Rub spice mix all over pork.
    • Place in shallow aluminum pan fat side up and place in smoker at 225-230
    • Bring to 165 degrees and cover pan tightly with foil. Keep the pan juices in pan.
    • Continue to cook pork until tender, approx 195-205
    • Remove from smoker.
    • Drain and strain pan juice to remove solids and save. Don't discard melted fats and oils.
    • Wrap pork tightly with foil and then in towel.
    • Keep warm in cambro/ or cooler.
    • When ready, pull the meat apart, remove all fat and cut into bite size pieces.
    • Put pan juices in saucepan, add the frozen orange juice concentrate, lime juice and cilantro.
    • Bring to boil and simmer. Taste and add salt if needed.
    • Pour over pork, cover and reheat in oven 20-30 minutes.
    Serve with black beans, white rice cooked in chicken broth with cilantro.

    For Mojo Smoked Jackfruit (perfect for those that cannot eat meat)
    Two 20 oz cans young jackfruit.
    Shred the jackfruit. I use only the outer part by cutting off the firm center.
    In skillet add:
    • Olive oil heat and saute 1 teaspoon chopped garlic
      Add
    • 1 cup vegetable broth to create pan juice.
    • 2 Tablespoons Orange juice concentrate
    • 1 Tablespoon lime juice
    • 1 Tablespoons dry oregano leaves
    • 1 Tablespoon or more, to taste ground cumin
    • 1 Teaspoon or more fresh ground pepper
    • 1/2 Teaspoons chili pepper or Chipotle (use none or as much as you wish)
    • 1/2 Teaspoon salt
    Use more of less of the above depending on taste.
    Bring to boil and taste.
    If too bitter, add a tablespoon of sugar. Taste it with a piece of jackfruit.
    Mix sauce with jackfruit in a shallow aluminum pan.
    Place uncovered in smoker at 225 degrees. 30min to 1 hour, stir to allow smoke to reach all pieces and fully heated through.​

    Great post! I saw a similar recipe (for the Jackfruit) on Diners, Drive In's and Dives. Guy was blown away by it!

      I have a friend who is very allergic to meat proteins and at a BBQ I didn't want to leave her out. While there are lots of jackfruit "bbq" recipes, I wanted to give this some good smoke and have the mojo flavor. It was really pretty darn good.
