We made this brownie for our church fundraiser, and it did well. I really wanted to do a brownie with bacon in, so I am pleased with the end result. I feel a bit strange posting a brownie recipe of all things, because like chili, my sense that brownie recipes are prized and rather personal. However, it was requested, so I am here to serve.
Still here goes nothing.
STEbbq's Super Easy and Outrageous Bacon Caramel Brownies with Espresso Sea Salt
Serving Size:
8x8 pan of brownies ( so.... one serving for ol holehogg ?)
Time:
1.5 hours (30 minutes prep/1 hour cooking)
Serve with:
Ice cream, pie, whipped cream etc.
Special tools:
8x8 pan + Herb Cutter ( as an example ). The herb cutter is pretty useful for chopping the bacon down to size, but a lot of other tools can do the same thing.
Ingredients:
2/3 cup of brown sugar
1 pd of best quality and thick bacon (I used Wrights, but homemade bacon could also work for sure)
Brownie (Only Ghirardelli if boxed or if you want a recommendation)
Espresso sea salt (not really common, but I bought mine here ). This smells amazing!
Process
1. Preheat oven or smoker to 350. Line pan with aluminum foil and make sure it has a thick edge to avoid spills/leak. Mix bacon with sugar on oven pan. Lay bacon flat on pan and sprinkle any remaining sugar on top. Cook for about 20 minutes until crispy and glossy. Not all of the bacon will come off, but that's okay because that's a great cook snack. Chop bacon into coarse chunks using herb cutter or another tool.
2. Mix brownie ingredients (egg, water, oil, and dry) in food stand mixer. Use low setting until nice and dark. Prepare pan for release with butter, butter/flour, or spray oil for easy release. Pour in pan and cook at 325 for 30-40 minutes. Check at 30 minutes to see if toothpick goes into middle of brownie and comes out clean, and again at 40. Once toothpick test is passed, remove brownie and let cool for up to 1 hour.
3. Taste caramel sauce to gauge sweetness. Pour caramel sauce on top of cooled brownie and smooth. Sprinkle bacon bits evenly all over caramel frosting.
4. Sprinkle espresso sea salt to taste. It's strong, but so good.
