1. Dry brined bone-in Prime Rib Roast overnight with Traeger Coffee Rub
2. Fired up Traeger Timberline 850 to 225*F, super some mode on
3. Placed in pellet smoker bone side down
4. 4 hours later internal temp at 135*F
5. Rested 20 min and sliced.
BTW during the 4 hrs. My wife, son, a friend, and I walked to Starbucks and had Peppermint Hot Chocolate.
How simple was that? Prep, smoke, rest and eat.
