    Hush Puppies Recipe?

    Anyone have a hush puppy recipe they'd like to share? I've never made them but after having some at a local restaurant that were really good I decided it's time to give them a shot.

    Every time I make these, they are always a hit and people want the recipe.

    Ingredients
    • 2 c self-rising corn meal mix
    • 1/2 c self-rising flour
    • 2 eggs
    • 3 tsp baking powder
    • 4 TBS sugar
    • 2/3 c chopped onions
    • dash of salt and pepper
    • Chopped Jalapeno (optional)
    • 3/4 to 1c buttermilk (buttermilk is a must)

    Directions
    Mix dry ingredients, eggs and onion. Stir in enough buttermilk to make a
    firm batter. Let sit for at least 1/2 hour, do not stir again. Spoon into hot
    oil.

        The first recorded use of the word "hush-puppy" dates to 1899.The name is often attributed to hunters, fishermen, or other cooks who would...feed it to their dogs to "hush the puppies" during cook-outs or fish-fries. Other legends date the term to the Civil War, in which Confederate soldiers are said to have tossed fried cornbread to quell the barks of their dogs.

      Kathy has two she uses:

      2.5 Cups vegetable oil for frying
      1 Cup Cornmeal
      1 Teaspoon salt
      1 Tablespoon Baking Powder
      1 Teaspoon sugar
      1/2 cup plus 2 tablespoons of water

      Optional; Grated onion or onion powder. Kathy likes to use buttermilk instead of water

      Heat oil in cast iron skillet to 350-375
      Mix dry ingredients together and then stir in the water or buttermilk.
      Spoon the mixture into little football shapes and drop in oil. Turn the puppies every few minutes to make sure all sides cook
      Look for a thick brown crust. Drain on paper towels.

      The other one uses eggs:

      2 cups cornmeal
      1 Teaspoon salt
      2 Tablespoons chopped green onions
      1 Cup Milk or Buttermilk
      2 eggs
      1/4 Cup lard or Vegetable Shortening - melted
      2.5 Cups vegetable oil for frying

      Mix the dry ingredients
      Add the eggs, milk, and melted lard/shortening and mix well. Lard gets you a crisper crust.
      Batter should be not be crumbly. If needed add more milk.
      Form and fry as above.

        I like green onions instead of regular onions. If you make them with pulled pork on the inside, then they're Hush Piggies. Something I've been doing for years.

            The only thing I knew about Hush Puppies was the brand name if shoes.
            Wonder what my peeps are going to think when I tell them Hush Puppies are on the menu.
            Probably "leather steak". I may have made some of those in days gone by.

                If you're in a pinch on time or ingredients, a bag of House Autry cornmeal hush puppy mix ain't half bad if you can find it, at least as a base to build on.

                  Yup, I almost always include th ninja'd onion, an jalapeños (or ^^^^^beyond, peppers-wise)
                  Ninja'd bacon comes heavily into play here, as well..
                  (Jus Sayin)
                  Heaven forbid, any kinda sorta cheese git involved)
                  (On accounta that'd jus be wrong, on so many levels, ya know???)

                Smoked Jalapeño Poppers with maple syrup glaze.

                ingredients:
                10 fresh whole jalapeños

                Two 8oz tubs of cream cheese with chives

                your favorite bbq rub (I used Kosmos honey chipotle killer bee)

                1/4 cup of maple syrup

                Two packages of bacon

                Steps:

                halve jalapeños and cut stem off

                use spoon to scoop out membrane and seeds

                in a bowl, blend cream cheese with a few shakes of the bbq rub

                Fill each jalapeño with cream cheese

                wrap each jalapeño with a piece of bacon

                sprinkle bbq rub over the tops of wrapped jalapeños

                smoke for 25 minutes then brush with maple syrup

                smoke 10 more minutes

                if you want crispier you can broil for 7 minutes in oven

                I used GMG Dave’s Crocket heated to 375 degrees.
