Got an email from chefsteps on that video today, so I tried it. Works like a charm!

Been doing this for years. I'll also do this when I want an egg on top of hash. I just crack the egg directly on top of the hash and cover the pan.

Where did the thin layer of white at the far edges go (snakeskin I call it)?

You don't get that with this process. The low heat allows the egg white to flow to the edge without bubbling and thinning it out so it just coagulates at the edge.

My grandma taught me that decades ago. Never rush sunny side up eggs.
Cast iron skillet, low heat (never pass 2 on the stove knob) lard or ghee, cover pan and walk away.
I looked at the video the other day and I was like that's not really new.

        Now the emoji thing? Really?

How they relate an Emoji to an egg... I don't have a clue.😎

                noun emo·ji \ē-ˈmō-jē\
                plural emoji or emo·jis
                Definition of EMOJI

: any of various small images, symbols, or icons used in text fields in electronic communication (as in text messages, e-mail, and social media) to express the emotional attitude of the writer, convey information succinctly, communicate a message playfully without using words, etc. — compare emoticon

it's like the cartoon version of the real thing. For example, smiley face emoji.

                      @Ray

Dude... You're over 13 years old, you've got no chance!

My 2 1/2 year old granddaughter can manipulate my iPad better than I can. She likes to watch Pluto cartoons from my I pad. She can bring them up off of google by herself already.

I showed her how to spell Pluto and she remembered it. My, my, my....

                      LOL. And true!

I saw a video of about a 2 yo playing with an iPad. Then the iPad went away and she was given a magazine. She tried to use the mag like an iPad. To her, the mag was just a broken iPad. Was pretty funny.

Wartface Oh yeah! My granddaughter, now 4, was ordering movies on Netflix at 2, much to my daughter's dismay. All on an iPad! Yep, I'm totally disqualified for emoji lingo.
