This is a time in our Country where we should be very thankful for what we have had in the past few years. I pray our Country's future will not be as bleak as forecasted. So on that note, I am spatchcocking my first turkey instead of standard smoking using the Citrus-Herb recipe on Amazing Ribs and can not wait to see how the meat turns out. As a side note for technical issues though, I have used many rosemary garlic type recipees on chickens and discovered that in addition to all this prep that soaking the bird in a salt and garlic bath overnight infuses a substantial amount of water through osmosis making the bird real juicy. Unfortunately, I have no room for a 15 pound turkey in a pot in my fridge...but if I do next time I will rehydrate this bird!

So this has been a different but wonderful Thanksgiving so far. Last night one of our teenage granddaughters set up a multi FaceTime meet and we spent the evening doing all our prep work, separate but together, for today’s meals. One grandson who is stuck in a college dorm room with only a microwave demonstrated his mastery of one microwave cooking. Another was preparing a vegetarian dressing which actually looked and sounded delicious. By last count 6 pies had been successfully baked and enough food prepared to feed a small army, although a widely scattered one.
Today, Kathy and I will be sit at the table and remember all the great past Thanksgivings we have shared over the years with family, and those memories will be enough for us to enjoy the day.
