    The Stall

    Even though I wasn't bright enough to measure the temperature inside my R2D2 Brinkmann, I have been using a remote sensing meat probe thermometer for the last few butts and briskets I've done. I do not seem to experience any kind of significant stall and I am crediting the huge water pan in the Brinkmann for that. Any thoughts or comments?

    If the humidity is very high you may not experience a stall.

    The closer you get to 300, the less of a stall you'll have, and going by your other post if you were around "225" you were close to 300.
