    Franklin does his own wrapped brisket test.

    The thing that surprised me most is that at the temps he is smoking wrapping does essentially nothing to help time.

    Not so much the temp he is smoking, but the time (barkness) at which he wraps. He doesn't wrap on internal temp. So there really isn't much left to the cook once you cook past the stall. I think most of mine might go an hour once I wrap, some never if the humidity is HIGH.
