    (Costco) Boneless Chuck Short Ribs?

    has anyone ever cooked these? Or looked at them? Trying to figure out if they're actually boneless short ribs or just trimmed & sliced check roast. I bought some & am cooking them tomorrow - just don't know how yet.

    Reminds me of country style ribs (sliced butt) and boneless chicken wings made from 100% breast meat.

    I use them all the time to make Carbonnade a la Flammande (Belgian Beef Stew) and they are great. Haven't smoked them though.

        The more I look around the Web, the more confused I am. They certainly appear to be boneless ribs like MH discusses near the bottom of his Zen of Beef Ribs page. He talks about doing them low & slow to 205. On the other hand, they seem to be what Kenji describes as English cut (then taken off the bone) and he does them fairly hot a la Argentinian style to 125, here.

        Hmmm, what to do, what to do....?

          When I make that dish it's done in the slow cooker - I have never cooked them quick, so I don't know.

            The Burn, here is a chance to do some both ways. TOFTT and report back?

            If they really look like the pick.....well marbled, I'd lean toward low and slow.
